I know it’s not summer yet, but for some reason this salad screams SUMMER. Sweet, fresh corn, right from the cob is mixed with black beans, ripe tomatoes, creamy avocado, then tossed with a spicy Sriracha dressing.

Now, this Sriracha Salad Dressing is only 4 ingredients + Salt and Pepper and whips up in no time. It’s my go-to dressing. It goes on any salad or veggies.

Just pour and toss. Bring this to your next picnic or potluck and they will love you. If you like a little less spice in your life, reduce the tablespoon of Sriracha to a teaspoon, or even less if you’re scared. Don’t be scared!

Sweet Sriracha Salad Dressing

Ohhh…Sriracha…how I love thee. I have known about this divine hot sauce for many years, but just not smart enough to buy any until a few years ago. Back in the 90′s {yep, feeling old saying that!} one of my friends, named Vu, had this hot sauce always in his fridge. In fact, I don’t think he ever had anything else but Sriracha and beer. Bachelors! But, I do appreciate him introducing this to me…because it’s fantastic.

Ok, now, back to this salad dressing and yummy vegetarian dish at hand. Here’s the recipe….easy as pie. Except, pies are hard to make.

Sriracha Summer Salad


Yvearl’s Recipe: Sriracha Summer Salad


  • 1 T Sriracha hot sauce
  • 1/4 cup honey
  • juice of one lemon
  • 1/8 cup of extra virgin olive oil
  • Salt + Pepper
  • 2 ears of fresh corn, corn shaved from cob
  • 1 cup black beans
  • 1 ripe avocado chopped
  • 1/4 cup chopped tomatoes


  1. In a medium bowl combine Sriracha, honey and lemon juice. Whisk to combine. Slowly add olive oil.
  2. Mix well.
  3. Add Salt and Pepper to taste.
  4. Pour over the rest of the ingredients. Toss and enjoy immediately, or refrigerate for 1 hour or overnight.
  5. Salad will get spicier as it sits!

Preparation time: 15 minute(s) Yields: 4 cups

    Oh man! I HAVE to make this! May have to go with the 1tsp if I expect my 2yo and 5yo to eat it, but still.
