Quinoa Salad Spring Rolls with Spicy Peanut Dipping Sauce
My kids watched me as I edited these pictures and they asked where the spring rolls were. Ummm…well, my tummy? Sorry, kiddos. I made these for lunch. Ate half for lunch and the other half for a snack. Gone. Maybe next time?
Artichoke Dip
We love this dip. It’s creamy, cheesy, and oh-so-not healthy! I bring it to parties or have it here at the house when we have friends over. It’s definitely a guilty pleasure and super easy to make.
Bodie’s Lion King Adventure
To say my son “loves” the Lion King would be putting it lightly. We’re talking crazy obsession. So, when it was time to plan his 3rd birthday party, having a Lion King themed party at the zoo was, well…AWESOME!!! And this picture of the lion roaring captures it all.
I’ll never forget that scene in my entire life. It was meant to be. We were strolling along the Fort Worth Zoo, after the party portion, and came upon this lion. He was lying down, yawning, and pretty much doing nothing, which was perfectly fine. I mean, they are glorious to look at, no?
Easy Marshmallow Fondant Recipe
This was not my favorite cake. I didn’t spend enough time on this, nor did I research it enough before I began, but oh. well. This is my second fondant cake. The first one is a guitar cake I made for Bodie’s first birthday party. That’s when I fell in love with fondant!
So, yeah, here we go….This fondant is so freakin’ awesome, incredibly easy, and the colors turn out really vibrant. Score! Yes, that is a baby monitor in my picture, because I waited until the three-year-old took a nap to even attempt this fondant. I highly advise focus whilst attempting fondant cakes. {And it’s best to keep the fondant covered with plastic wrap so it doesn’t harden.} Are these colors not yummy???
A Pinterest Try and Some Hot Air Balloons
The weekend before last was nothing short of amazing. Friday night, I had a fun and much needed girls-night-out with two of my sweet friends. We ate at Ocean Prime in Uptown. Food was outstanding and service was great. However, we tried a martini called Berries and Bubbles that was just terrible. It was too sweet and to top it off they added dry ice for effect. A bad effect. I kept thinking I would swallow a piece of dry ice and dangit there goes my one night out…not to mention a trip to the ER perhaps. But I’d be more bummed about a blown night out.
